Turkish Circassian Chicken: A Flavorful and Easy-to-Make Dish
Ingredients:
For the chicken:
- 1 kilogram (2.2 pounds) boneless, skinless chicken breasts, cut into cubes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried coriander, ground
- 1/2 teaspoon cinnamon, ground
- 2 bay leaves
- 2 cups water
For the walnut sauce:
- 6 slices toast bread, cut into cubes
- 1 cup walnuts, chopped
- 1 cup milk
- 1/2 cup chicken broth
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup parsley, chopped, for garnish
Instructions:

Make the chicken:
- Heat the olive oil in a large pot over medium heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for 30 seconds.
- Add the chicken and season with salt, pepper, coriander, and cinnamon.
- Stir until the chicken is no longer pink.
- Add the water and bay leaves, bring to a simmer, then reduce heat and simmer for 20 minutes, or until the chicken is cooked through.

Make the walnut sauce:
- Heat the olive oil in a skillet over medium heat.
- Add the garlic and cook until fragrant, about 30 seconds.
- Add the bread cubes and walnuts and cook until golden brown, stirring occasionally, about 5 minutes.
- Add the milk and chicken broth and bring to a simmer.
- Reduce heat and simmer for 5 minutes, or until the sauce has thickened.
- Stir in the salt and pepper.

Assemble the dish:
- Preheat the oven to 180 degrees C (350 degrees F).
- Spread cooked rice in the bottom of an ovenproof baking dish.
- Top with the cooked chicken.
- Pour the walnut sauce over the chicken.
- Garnish with chopped parsley.
- Bake for 20 minutes, or until heated through and golden brown.
Tips:
- You can use whole chicken or any other part of the chicken you prefer.
- Feel free to add more ingredients to the walnut sauce, such as chopped green pepper or fresh cilantro.
- Serve Circassian chicken with a side of salad or yogurt.
