Ingredients:
- For the toasting:
- 1 loaf of French bread, cut into cubes
- 1/4 cup butter
- 3 cloves garlic, minced
- 1/2 cup white vinegar
- Salt and black pepper to taste
- For the broth:
- 1 kg lamb, cut into cubes
- 2 medium onions, sliced
- 3 cloves garlic
- 1 tablespoon tomato paste
- 1 teaspoon dried coriander
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 1 bay leaf
- Salt and black pepper to taste
- 6 cups water
- For the garlic sauce:
- 1/4 cup butter
- 3 cloves garlic, minced
- 1 cup tomato juice
- 1 tablespoon tomato paste
- Salt and black pepper to taste
- For the rice:
- 2 cups basmati rice
- 4 cups water
- Salt and black pepper to taste
- For garnish:
- 1/2 cup mixed nuts, fried
- 1/4 cup parsley, chopped
Instructions:

Make the toasting:
- Preheat the oven to 180°C (350°F).
- In a skillet over medium heat, melt the butter.
- Add the garlic and cook until golden brown.
- Add the bread and cook until golden brown and crispy.
- Add the salt, pepper, and black pepper and stir to coat.
- Spread the toasted bread on a baking sheet and bake for 10 minutes, until golden brown.

Make the broth:
- In a large pot over medium heat, heat the oil.
- Add the onions and cook until golden brown.
- Add the garlic and cook for 1 minute.
- Add the lamb and cook until browned.
- Add the tomato paste, coriander, cumin, cinnamon, and bay leaf.
- Add the salt, pepper, and water.
- Cover the pot and simmer for 1 hour, or until the lamb is tender.

Make the garlic sauce:
- In a small skillet over medium heat, melt the butter.
- Add the garlic and cook until golden brown.
- Add the tomato juice, tomato paste, salt, and pepper.
- Stir the ingredients until well combined.

Cook the rice:
- In a pot over medium heat, rinse the rice well.
- Add the water, salt, and pepper.
- Cover the pot and simmer until the rice is cooked.

Assemble the fatta:
- In a large serving dish, spread the toasted bread.
- Pour the broth over the bread.
- Spread the rice over the broth.
- Pour the garlic sauce over the rice.
- Garnish the fatta with the nuts and parsley.
- Serve the fatta hot and enjoy!
