The Egyptian fatta is a layered dish made with toasted bread, rice, meat or chicken broth, and a savory garlic sauce. It is a popular dish during Eid al-Adha and other special occasions.

Ingredients:

  • For the toasting:
    • 1 loaf of French bread, cut into cubes
    • 1/4 cup butter
    • 3 cloves garlic, minced
    • 1/2 cup white vinegar
    • Salt and black pepper to taste
  • For the broth:
    • 1 kg lamb, cut into cubes
    • 2 medium onions, sliced
    • 3 cloves garlic
    • 1 tablespoon tomato paste
    • 1 teaspoon dried coriander
    • 1 teaspoon cumin
    • 1/2 teaspoon cinnamon
    • 1 bay leaf
    • Salt and black pepper to taste
    • 6 cups water
  • For the garlic sauce:
    • 1/4 cup butter
    • 3 cloves garlic, minced
    • 1 cup tomato juice
    • 1 tablespoon tomato paste
    • Salt and black pepper to taste
  • For the rice:
    • 2 cups basmati rice
    • 4 cups water
    • Salt and black pepper to taste
  • For garnish:
    • 1/2 cup mixed nuts, fried
    • 1/4 cup parsley, chopped

Instructions:

  1. Make the toasting:

    • Preheat the oven to 180°C (350°F).
    • In a skillet over medium heat, melt the butter.
    • Add the garlic and cook until golden brown.
    • Add the bread and cook until golden brown and crispy.
    • Add the salt, pepper, and black pepper and stir to coat.
    • Spread the toasted bread on a baking sheet and bake for 10 minutes, until golden brown.
  2. Make the broth:

    • In a large pot over medium heat, heat the oil.
    • Add the onions and cook until golden brown.
    • Add the garlic and cook for 1 minute.
    • Add the lamb and cook until browned.
    • Add the tomato paste, coriander, cumin, cinnamon, and bay leaf.
    • Add the salt, pepper, and water.
    • Cover the pot and simmer for 1 hour, or until the lamb is tender.
  3. Make the garlic sauce:

    • In a small skillet over medium heat, melt the butter.
    • Add the garlic and cook until golden brown.
    • Add the tomato juice, tomato paste, salt, and pepper.
    • Stir the ingredients until well combined.
  4. Cook the rice:

    • In a pot over medium heat, rinse the rice well.
    • Add the water, salt, and pepper.
    • Cover the pot and simmer until the rice is cooked.
  5. Assemble the fatta:

    • In a large serving dish, spread the toasted bread.
    • Pour the broth over the bread.
    • Spread the rice over the broth.
    • Pour the garlic sauce over the rice.
    • Garnish the fatta with the nuts and parsley.
    • Serve the fatta hot and enjoy!
